Health Ministries is not only about assisting our members with living healthier, happier lives; it is also about reaching out to the surrounding community.
From demonstrating healthy principles at our Sabbath potluck to offering seminars on smoking cessation and stress free living we want to provide lots of ways for people to lead healthy and happy lives.
One of the ways we reach out to our community is through HELP (Healthy Eating and Living Program).
Savory lentil pot pie and Never fail oil crust
SAVORY LENTIL POT PIE
6 c. water 3 T. flour
2 pkg. G. Washington broth 3 T. margarine
1 medium onion, diced 2 c. cooked lentils
2-3 fresh carrots, cut French style 1/2 t. sage
2 stalks celery, diced 1/4 t. parsley
3-4 uncooked potatoes, cut 1 t. salt
French style Pie crust topping
Cook onion, carrots and celery in water with broth until about half done. Add potatoes. Brown flour in frying pan and blend with margarine. Add 1 cup of hot liquid from vegetables. Cook until thickened and combine with rest of vegetable mixture. Add lentils, sage, parsley and salt. Consistency should be thin. Place in a large casserole or baking pan and cover with pie crust. Bake in 350 degree oven until brown.
SERVES: 8-10 Served with a Waldorf Salad, this is an entire meal

NEVER FAIL OIL CRUST
2 c. white flour, unsifted 2/3 c. oil
2 T. wheat germ - optional 1/3 c. cold water
1 t. salt
Stir together with fork: unsifted flour, wheat germ, and salt. Combine oil and cold water in separate container. Stir oil and cold water mixture all at once into flour. Stir until flour is all dampened. Divide into two balls. Roll out each ball between two sheets of waxed paper until size for crust.( To keep paper from shifting, dampen area where paper is placed.) Bake shells in a 425 degree oven for ten minutes.
YIELD: 2 large crusts
